An experiment that worked!  I had fun with this one.  These muffins use pepperkake dough to flavour.  Pepperkake bits are put into the batter then turn into gooey balls inside the muffin and grated pepperkake for a crumble forms a crunchy shell on the top.  It is best to use strong or dark flavoured pepperkake dough for the best results.

First put about 250g of pepperkake dough in the freezer.  Start recipe when frozen.

1o0g pepperkake dough (unfrozen)
250g butter
225g sugar
5 eggs
250g flour
1 tablespoon of vanilla sugar
1 teaspoon of baking powder

For the batter, beat the butter and sugar until fluffy.  Beat in one egg at a time.  Mix the flour, baking powder and vanilla sugar together.  Add to wet mix and beat.  Chop pepperkake dough into small pieces.  Stir into the batter and spoon batter into muffin molds.

Grate frozen pepperkake.  Add enough sugar and butter to make a crumble.

Sprinkle on top of the batter.  Cook at 180 degrees celcius for 25 minutes.  Cool and then drizzle white icing on top of muffins.
