Father’s Day Cake

Sometimes you don’t have the time to make a cake for every celebration in Norway, and there are many. That’s okay as you can buy traditional fresh cakes from the store at the last minute. (This is so you don’t have to store it for a whole day in the fridge at the risk of all the taste-testers.) A store bought marzipan cake may be a little firmer and made with jam instead of fruit, but it still goes down well on Father’s Day. Pappa always gets the first piece – I couldn’t take a picture of it as it was gone as soon as it was served. But the icing was his compliment ‘your marzipan cake is better’.
