brown-cheese-marm The Norwegian sandwich is very open on the 'sandwich-making' rules.  First it doesn't have a lid on top so it can be stacked as high as Norwegians want, and then you can put crazy stuff on it like brown cheese and marmalade.  I know cheddar and grapes go together on a platter but caramel and orange on bread?  What will they think of next? You'd think that having the name 'brown cheese' it would actually be cheese, but technically, it is not!  It is a solid form of caramelised cream that foregoes the normal cheese-making process.  What gives its smooth, gummy texture is keeping it in it's adolescent form.  Maturity is not required!  And that attitude is just perfect for a Norwegian sandwich - next up on the bread is banana and caviar!
