Norwegian-Style Canadian Waffles
Blueberry waffles with pear and crispy bacon, drizzled with Canadian maple syrup!
This was our breakfast this morning. No use waiting for the weekend, every time I opened the fridge the blueberries we picked were crying out to me ‘eat us… eeeat us’. What’s a girl to do but help blueberries fulfil their purpose in life?
Our first batch of blueberries are almost gone – oh no! Not to worry, we found another patch hiding by a gully in the woodlands behind our place. They are just sitting there ripening as we speak. It’s a waiting game though – if we pick now not all the blueberries will be ripe but if we wait too long a passer-by might beat us to it. I think this is what makes blueberries season so precious – you never know how much ya gonna get.
